Here is a few recipes , Straight form your garden to your kitchen.
Why not try some and get your taste buds tingling.
Red Cabbage
Ingredients
1 red cabbage
2 tablespoons caster sugar
2 Onions
1/2 cup of vinegar
2 teaspoons of cinnamon
4 Cloves
salt and pepper
Apples (diced) , Cranberries, Blueberries (optional just pick one of these fruit).
Method
1. Slice the whole cabbage and put it in a container with a lid.
2. Add caster sugar, vinegar, Cinnamon , cloves, salt and pepper.
3. Leave to marinade for 24 hours with the lid on, occasionally shaking ( this is to ensure the cabbage is marinaded properly).
4. After the 24 hours have passed dice your onion and start to soften in a big pan.
5. Add your cabbage and marinade.
6. Cook for 2 hours on a low heat occasionally stirring.
7. An hour before your finished cooking why not add diced apples, cranberries or blueberries.
8. Serve or why not cool down a freeze for another time .
Mint Jelly
Ingredients
A large Bunch of mint (approx 2oz )
1/2 a pint of white vinegar
1lb of sugar
1 bottle of Certo
green food colouring
Method
1. Wash the mint thoroughly and divide into two.
2. Take the leaves off one bunch and chop finely.
3. Put the vinegar , sugar into a saucepan.
4. Add the the second bunch of mint.
5. Stir over a low heat until the sugar has dissolved.
6. Remove the bunch of mint.
7. Bring to the boil and boil for 1 minute.
8. Strain the liquid through muslin and return to the saucepan.
9. Stir in the Certo bring to the biol and boil for 2 minutes.
10.Add the chopped mint and a few drops of green food colouring.
11.Allow to cool slightly to prevent the mint from floating.
12.Pot and cover in the usual way.
